BC: Who came up with this beer’s recipe?
The basis of the beer is the recipe of an ancient Bock beer, but topped with our Belgian Brewers’ style and creativity.
BC: What’s your favorite aspect of this beer (flavor, aroma, etc.)?
The beer aroma, with its subtle, yet complex hoppy aroma.
BC: Where does this beer’s name come from?
The inspiration for the name goes back to the origin of the bock beer in Bavaria, Germany. In this mountainous region, cliff tops rise above the landscape. With a little bit of luck one can see a majestic brownish Ibex or Steinbock looking out over the mountains.
BC: Is this your “desert island beer?”
Yes, its fresh and hoppy aroma makes it an excellent desert island friend.
BC: Can you describe this beer in 10 words or less?
Dark, full-bodied, hoppy aroma with fruity and crispy notes, smooth.
BC: Do you know a story – or have a personal story – that revolves around this beer?
Cliff Top is a Bock Beer. The origin of Bock-beer goes back to the 14th century, from a town in Germany in the region of Niedersaksen, called Einbeck or “Eimbock”. From historical sources it seems that the beer was developed by monks as a kind of “liquid” bread to help them take good care of themselves during their fasting period.
BC: What's a good food pairing for this beer?
Meets well with pork stews and casseroles. The beer pairs well with hard cheeses.
