Against All Odds, Dorset Gets a New Brewery
Against the tide, Dorset is getting a new brewery now, at a time when so many are pausing on expansion and worse. Apex Brewing Co makes its debut with a very clear emphasis on doing things right — slow brewing, British ingredients and a long term business outlook. It’s a realistic, considered beginning that acknowledges the industry realities and the ambition behind the project.
According to a press release from Apex Brewing, the company has officially begun brewing at their 25-hectolitre state-of-the-art facility on Patson Hill Farm.
The brewery will eventually open a taproom, designed as a multifunctional events space. Guests can expect a free shuttle bus, farm-to-fork food, and an evolving display of cars that embody the spirit of Apex – including Martin Brundle’s Tyrrell 014 Series 3 F1 car.
The launch is notable not only for its ambition, but also for its timing: Apex is entering a challenging climate for new breweries, determined to grow slowly, carefully, and sustainably.
“This has been a dream in the making for over a decade,” says Alex Ferris. “We’ve taken the time to build a brewery that reflects our vision – beer without shortcuts, and a space that’s a destination in itself.”
Apex is unfiltered, unfined, and preservative-free, embracing a slow-brewed philosophy that prioritises flavour over speed. The brewery also champions British ingredients, sourcing as locally as possible to benefit the surrounding community.
The brewing team behind Apex carries serious pedigree. Tom Scratcher, formerly of Moor Beer, joins as Head Brewer, alongside Laura Bishop (Moor) and Russ Sykes (Wild Beer).
Head brewer, Tom says: “The beer industry has always had its ups and downs; what’s exciting about joining Team Apex is that we’re going back to a traditional way of brewing, letting the beer do its own thing in its own time – we’re on a working farm, and you wouldn’t expect anything less. This coincides nicely as drinkers nowadays are increasingly wanting easy going, well-made, simple beers that are not over processed. The days of 8.5% DIPAs being in high demand are long gone. Having grown up Somerset, then cutting my teeth in the highly competitive craft beer scene in Bristol, we’re looking forward to bringing something fresh and exciting to the Dorset locals.”
A key part of Apex’s ethos is giving back to the brewing community that has supported them. Plans are underway for cuckoo brewing, contract brewing opportunities, and benevolent initiatives to help new brewers gain access to facilities and guidance.
With brewing now underway, Apex Brewing Co. is ready to carve its niche – blending serious beer-making with a distinctly petrolhead personality.
