Highland Brewing Co. Pilot Brewer Josh Jiles Talks High Pines

We spoke with Highland Brewing Co. Pilot Brewer Josh Jiles about High Pines.

BC: Who came up with this beer’s recipe?
Pilot Room Team (specifically our former R&D Brewer Trace Redmond. Great job, dude!)

BC: What’s your favorite aspect of this beer (flavor, aroma, etc.)?
I really enjoy the flavors in this IPA; Slightly piney, medium body, great hop oils and alcohol coating the palate, very smooth, not hot at all for a 9% ABV DIPA.  It’s everything I enjoy in a beautiful double IPA.

BC: Where does this beer’s name come from?
It was named with the forest and fresh scent of mountain pines in mind. This is a beer that showcases our love for hops, mountains, bold flavors, picking wild blueberries and watching the seasons change.

BC: Is this your “desert island beer?”
I like this beer, but no. Orval or Seizoen Bretta Logsdon would be my go-to in that scenario.

BC: Can you describe this beer in 10 words or less?
Big, bold, resinous, piney, blueberry with smooth malt finish.

BC: What's a good food pairing for this beer?
I love a beer like this with spicy Indian food or a smoked BBQ plate.
