BC: Who came up with this beer’s recipe?
I did.

BC: What’s your favorite aspect of this beer (flavor, aroma, etc.)?
The way the Brett funk dances with the leathery citrus notes is just great. Moments later, it finishes super clean.

BC: Where does this beer’s name come from?
This beer is about kicking back and slowing down. This here is a Saison for drinking, not sipping. Named for Emanuel Wynn, the French pirate who pillaged the coast of North Carolina and the West Indies under the Jolly Roger flag that flies from the corner of our brewery. Only by a “timely surrender” could his prey evade death. A well-timed surrender is a necessity these days. Don't burn yourselves out, kids.

BC: Is this your “desert island beer?”
I could drink this every day. If I happened to be stranded on an island with cases upon cases of this beer, I would absolutely not complain.

BC: Do you know a story – or have a personal story – that revolves around this beer?
I took a much-needed beach vacation last year and had this aimless desire to just eat an unnecessary amount of Florida grapefruits on the beach. I think, at the time, that equated to a true beach vacation experience for me. This beer encompasses that surrender to arbitrary urges. The creation of this beer was pretty free-form and ended up having a bit of that bitter grapefruit earthy-citrusy profile, reminiscent of that trip.
