Description

Kimchi is a staple of Korean cuisine and it was only a matter of time before we found a way to incorporate it. With each swig, your palate will be taken on a journey from the refreshingly tart beginnings of ginger to the boldly aromatic and spicy finish of gochugaru (Korean sun-dried chili peppers). Not to mention, we also used our head brewer’s own personal kimchi culture. This kettle sour really is an experience in a can!

Kimchi Sour by Dokkaebier is being evaluated as a Wild Specialty Beer (Category 28C) from the 2015 BJCP Style Guidelines.

Kimchi Sour pours a hazy medium gold, with a thick and creamy white head that lays down quickly, which is appropriate in a sour beer. The aroma opens with a moderate clean, sharp sourness, light ginger and an herbal hit. As it warms, there is a light lemon and lime zest that develops. Malt and hop aroma are absent behind the spices.

The flavor features moderate ginger and a mixed herbal and spicy character. The lactic sourness is moderately high but not dominant. There is a light residual sweetness in the middle that dries out in the finish, with a hint of malt that makes an appearance mid-palate, along with light citrus zest. A medium body and moderate carbonation finishes this beer.

This is a pleasant and easy-drinking beer, with the adjuncts contributing to a complex aroma and flavor profile. A touch more malt aroma and flavor would help this beer develop even more character, but if you are a fan of spiced, sour beers, this one should be on your list.
