Czech Czech One Two by North South Brewing Co is being evaluated as a Category 3B Czech Premium Pils according to the 2015 BJCP Style Guidelines. As such, there is a expectation of brilliantly clear brew with a well rounded pils malt profile from start to finish; clean bitterness along with evident Saaz-type hop flavor and aroma. While this brew is quite nice, it is somewhat lacking in certain aspects of the style. 
A sulfur note comes up front in the aroma when the beer is poured, followed by a sweet background malt aromatic. There is a touch of spicy hop aroma behind this. The color is a hazy light golden with a white moderate-sized bubble head with fair retention. 
There is an evident malt backbone with a background sweet flavor. This sweet character carries through to the middle and finish, leaving a somewhat flabby and muddy finish. There is a rather light spicy, somewhat perfume hop flavor along with moderate bitterness, but not enough to deliver the clean finish expected for the style. The body is medium. 
A hallmark for any Czech Pils style brew is the smoothness delivered by the exceptionally soft water used in the brewing process. The water used in this brew seems a bit minerally, which can deliver an unexpected harshness in the finish. 
Overall, Czech Czech One Two is a nice pils, perhaps more German than Czech, but there are certain issues that do stand out. Cheers and Enjoy!!
