Time Flies by Clocktown Brewing Co. is being evaluated as a Doppelbock (2021 BJCP Guidelines Category 9A).

The aroma is appropriately all malt-driven with toasted bread crust indicative of Munich malt. The fermentation is exceptionally clean and there are no hops present. There is initially some alcohol present in the aroma, but it dissipates with some time in the glass. The color is a very attractive mahogany with burnished copper hues and generally clear that's short of brilliant. The head is a dense khaki with average persistence. 

Flavor in this beer is very rich with lots of malt depth; there are the bread crust flavors present in the aroma along with some roasted chestnut and dark grape fruit leather. The beer is appropriately dry with a hint of perceived sweetness due to low hop bitterness. A touch of drying astringent character is in the mouthfeel but not completely off-putting. Warming alcohol is present and noticeable but does not detract from the highly expressive malt flavors. The body is moderately full but the beer never seems heavy due to its drier finish. 

This beer is a wonderful representation of the style and will reward drinkers with even more malt flavors to discover as they allow the beer to warm in the glass. Many domestic doppelbocks seem to take on a bit of roast character and this beer avoids that pitfall. This one is worth seeking out if you know and appreciate the style.
