Barrel Aged Saison VII by pFriem Family Brewers was reviewed using the 2021 Beer Judge Certification Program guidelines under category 33B Specialty Wood-Aged Beers.
When served from a 12.7-ounce corked bottle this reviewer was greeted by a resounding pop and a burst of white foam, which, when poured, resulted in a substantial rocky head. Pale yellow in color and very turbid with heavy Belgian lacing.
The aroma was vinous and exhibited tropical fruit notes of pineapple and other citrusy aromatics in harmony with intense hoppiness.
Like the aroma profile, passion fruit and citrus flavors dominate yet come across as somewhat astringent and acidic with a tannic grape skin bite and a touch of Brettanomyces in the background.
The body was thin to medium, highly effervescent and finished dry as per style. This beer was unique with lots of complexity. Would have benefited from a tad less astringency.
