Description

This beer is a Braggot, or a beer and mead combination that we brewed to showcase these seasonal differences in honey. We then conditioned the beer on Earl Grey Tea to give it a light, slightly sweet, tea and honey profile.

Honey Project by Wild Leap Brew Co. was judged as a Braggot.

This delightful beer is a braggot – a beer/mead combo – aged on Earl Grey Tea. The combo evokes a marriage between a sparkling semi-sec mead and a saison. Honey leads the aromas, quickly followed by beer and tea notes with traces of fruity fermentation character. The tea flavors and tannins work with the hops to keep the braggot from being cloying while not dominating as the malt and honey harmonize evenly. Different flavors pop out as the braggot moves across the tongue giving it an interesting complexity. The alcohol is big but gently warming and not hot or harsh. The body is medium-light to medium with smooth and soft carbonation that cleanses the palate, making this a perfect beer to pair with a light dinner or an evening with friends. Everything fits together well and nothing is out of place. A little something extra – some funk, a touch more saison, or more bitterness would make this a world-class brew, but as it is, if I saw it for sale, I would buy it.
