We spoke with Wallenpaupack Brewing Co. head brewer Logan Ackerley about No Frills Pils.
Who was responsible for this beer’s recipe?
I designed the original recipe, but small changes have been made each time we brew the beer based on our production team’s honest and meticulous sensory analysis.
What sets this beer apart from other examples within the style?
Our water is naturally high in sulfates, making it well-suited for brewing German-style pilsner. The hop bitterness, flavor, and aroma we’re able to display are second to none.
What makes this beer truly World Class?
Your judge said: “After the big reveal, this judge was surprised that this beer didn’t come from Germany.” As an American brewer making German-style lagers, you can’t ask for better feedback than that!
What is your favorite aspect of this beer (flavor, aroma, mouthfeel, etc.)?
I love everything about this beer: the name, the can, the flavor, the aroma, the clarity, the carbonation, etc. However, the key ingredient seems to be the German-grown Saaz hops that we use. We had a batch that we ended up short a few pounds on, and we had to substitute with Czech Saaz. I’m not sure any of our customers noticed, but for the brewers, it totally changed the perception of this beer.
How popular is this beer among your faithful fans?
Outside of our rotating lager series, “For The Love Of Lager,” No Frills is our most popular lager overall. The plan for 2026 is to get it in 12-packs, and I frankly can’t wait.
