Belgian yeast esters take center stage in this Belgian tripel, named after our owner’s late 3-legged cat, Speedy. Our brewers finished this beer with Saaz hops for a spicy, yet floral complement to the dry Belgian yeast esters.

Speedy, The 3-Legged Cat by Metazoa Brewing Co. was judged under the style guidelines provided by the Beer Judge Certification Program (BJCP) category 26C Belgian Tripel after being dispensed from a pint can into a Belgian snifter.
A faint sulfur note was at first evident but quickly gave way to spicy yeast phenols and aromatic hops that were non-aggressive and married well with the aforementioned phenols.
The hue presented a glistening golden-colored ale that was brilliantly clear with a big white head that fell quickly off.
Spicy phenolic flavors reminiscent of Belgian multi-strain yeasts melded nicely with citrus esters, Pilsner malt and a light touch of hops create a flavor profile that well exemplifies the style. The finish was dry and cleaned up any residual sweetness that might have lingered. Alcohol was well concealed, although obvious in its presence.
The body was full and non-astringent. A bit under-conditioned since the style calls for high carbonation with a persistent head and Belgian lace.
A well-conceived example of the style that balances all the key ingredients nicely and would please even the most persnickety beer connoisseur.
