Description
Much fuller in body than alcohol content, this ‘lil saison smells like summer and it tastes like it too. Expect fresh cut lemons, herbs, hay, and field flowers. It has a high fizz factor, and a crisp, dry finish.

Chaise Longue by The Establishment Brewing Co. was judged as a Brett Beer according to the 2021 BJCP Style Guidelines (Category 28A). The base beer style for this beer is a pale Saison (Table Strength) (Category 25B).
As I’m handed the glass for my judging, I notice a big white head on this cloudy, pale yellow beer that quickly dissipates. However, the head is easily roused with a slight swirl. Lifting the glass under my nose, I’m immediately met with a medium-low level of lemony (citrus) notes. Another whiff provides a subtle indication of the wild yeast Brettanomyces. Sometimes described as an earthy/funky character, it complements the lemony character of the lactobacillus. Other complementary aromas (a very low bready grain note, a very light floral hop character plus light white pepper notes) blend wonderfully with the initial notes, inviting me in for a taste of this beer.
My initial taste favorably mirrors the aroma. A medium tart lemon flavor leading to a pleasant puckering sensation. Immediately following is a light touch of Brett character supported by a low spicy grain flavor (I think a blend of wheat and/or pilsner malt, maybe). Some of the spiciness could be yeast-derived. With this beer I don’t pick up any hop flavor. There is a low hop bitterness evident, but I find that it doesn’t get in the way of the lacto sourness, which balances the flavor of this beer. The finish is off-dry and the lemon and Brett characters linger in the aftertaste. The body is a little more full than I expected (medium body) but the carbonation is spot on. Even with the sourness, the beer is very smooth with no astringency. Also, there is no alcohol warmth; it is any easy-drinking sour.
This is an excellent beer! I really enjoyed both the aroma and flavor, it’s easy-drinking and refreshing and a great summer offering (and probably all year if you need a refreshing pick-me-up). From a style-guideline standpoint, I only found a few things that keep it from being World Class: the color is a tad light (for style), the finish is not quite dry, it has a slightly fuller body than expected, and it could use just a touch more hops in the flavor. Otherwise, outstanding!
