We spoke with Area Two Experimental Brewing Master Brewer Phil Markowski about Hexotic.
BC: What’s your favorite aspect of this beer (flavor, aroma, etc.)?
The flavor melds together in such a way that doesn’t allow one fruit to dominate over another. It is also balanced albeit with an emphasis on sour, but it is not painfully sour as are some similarly styled brews.
BC: Where does this beer’s name come from?
The name comes from a combination of the Greek “hex”, meaning “6”, and “exotic”, since there are 6 different exotic fruits in the beer. The six fruits are mango, orange, pineapple, guanabana, passion fruit and guava.
BC: Is this your “desert island beer?”
Maybe once upon a time but now I have to worry about acid reflux!
BC: Can you describe this beer in 10 words or less?
An explosion of tropical fruit character with a funky background.
BC: Do you know a story – or have a personal story – that revolves around this beer?
We started the original small batch version of this in 2013, our first full year of operation. We actually had some surplus Maibock and used that as the base brew, believe it or not!
BC: What's a good food pairing for this beer?
Hexotic would pair well with a stinky cheese. It is a good palate cleanser.
