We spoke with Avery Brewing Co. Founder Adam Avery about White Rascal.

BC: Who came up with this beer’s recipe?
15th century brewers from the village of Hoegaarden came up with this recipe! I'm only sort of kidding. I wanted to pay tribute to the Belgian witbier tradition by brewing my own witbier in the vein of that original recipe. We use an actual Belgian yeast strain, the traditional malt bill of 50% wheat and spice it with Curaçao orange peel and coriander.

BC: Where does this beer’s name come from?
Tales and images of demons are popular in Belgian folklore, and we followed suit by creating the name and the character White Rascal.

BC: Do you know a story – or have a personal story – that revolves around this beer?
In the early 2000s, I was spending a lot of the summer drinking awesome, old school imported Belgian witbier. Those beers were super flavorful and insanely drinkable, and I wondered why they were almost unknown and only available at one or two Denver craft beer bars. And it hit me, “Dude, you own a craft brewery! You can make this right here in Colorado!” The main goal from the very beginning of White Rascal was to capture the flavors, aroma and drinkability of a real Belgian wit.

I pair this beer with everything I eat!
