Brouwerij Timmermans CEO Anthony Martin Talks Framboise Hibiscus Lambicus

We spoke with Brouwerij Timmermans CEO Anthony Martin about Framboise Hibiscus Lambicus.

Who was responsible for this beer’s recipe?
This beer is my brainchild of Anthony R. Martin. When coming up with beer idea, I strive to continue to honor my family’s rich brewing heritage while pushing the boundaries of innovation. This beer combines the bold fruitiness of raspberries with the subtle floral elegance of hibiscus, creating a unique and modern take on the traditional lambic.

What sets this beer apart from other examples within the style?
While many lambics focus solely on fruit, Timmermans Framboise Hibiscus Lambicus introduces a rare floral element that sets it apart. Few raspberry lambics use 100% natural raspberry juice, and even fewer balance it with the delicate dryness of hibiscus. This combination not only enhances the beer’s flavor but also gives it a more sophisticated, thirst-quenching profile. It’s a perfect blend of fruitiness, acidity and floral complexity.

What makes this beer truly World Class?
Aged for one year in oak barrels, the lambic develops a depth and complexity that is unrivaled. After maturation, it is blended with raspberry juice and hibiscus, resulting in a beer with elegance and finesse. It stands out from the crowd of raspberry sours on the market, especially in the U.S., where its authentic lambic roots and innovative additions position it as a leader in the category. This is more than a beer – it’s a celebration of tradition and craftsmanship.

What is your favorite aspect of this beer (flavor, aroma, mouthfeel, etc.)?
It’s hard to pick just one aspect when everything about this beer is extraordinary! The color is stunning: a vibrant pink with hints of red from the hibiscus, inviting you to savor every sip. The aroma is captivating, blending the sweetness of fresh raspberry jam with floral notes. On the palate, the beer is lively and refreshing, with a delicate tartness that transitions into a dry, crisp finish, thanks to the hibiscus. This balance of boldness and subtlety is what makes it truly irresistible.

How popular is this beer among your faithful fans?
Framboise Hibiscus Lambicus has quickly become a fan favorite, particularly in the United States. Its innovative flavor profile and visual appeal have won over craft beer enthusiasts. Recognizing its popularity, Timmermans has even made it available on draught in the U.S. market, ensuring that this delightful beer can reach even more devoted fans.
