BC: Who came up with this beer’s recipe?
This was a collaboration between myself and Micheil McElvey of Mastry’s Brewing.

BC: What’s your favorite aspect of this beer (flavor, aroma, etc.)?
I really appreciate the depth of flavor that came from the Brettanomyces-infused Chardonnay barrels, it really hits another level for a saison.

BC: Where does this beer’s name come from?
The name is a play on the name of rustic beer in French Chardonnay barrels.

BC: Is this your “desert island beer?”
Certainly! Saison is my favorite beer style.

BC: Can you describe this beer in 10 words or less?
Hay barn, white wine aromas with a dry pepper finish.

BC: Do you know a story – or have a personal story – that revolves around this beer?
I discovered Saison Dupont about 30 years ago and that beer (and style) quickly became one of my favorites. This has never changed for me, I have preferred many styles since I found craft beer but this one has always remained my “grand cru.”

BC: What's a good food pairing for this beer?
Pairs with fish and most seafood, spicy Asian dishes and Mexican fare. Also great with soft cheeses.
