We spoke with Seedstock Brewery Head Brewer Jason Abbott about Bourbon Barrel-Aged Doppelbock.
BC: Who came up with this beer’s recipe?
This recipe was written as a collaboration between Seedstock and Colorado-based Propagate Yeast Labs, which also supplied the yeast.
BC: What’s your favorite aspect of this beer (flavor, aroma, etc.)?
The non-barrel aged version had these great notes of plum and fig. When we combined those notes with the vanilla and oak of the Laws Whiskey House barrels (from the Denver-based distillery), well, let’s just say it warmed the cockles of our heart! All that said, we think the color of the beer is beautiful. It has an amazing ruby red clarity – glowing!
BC: Is this your “desert island beer?”
No! Not that I wouldn’t drink this on a desert island, but my first choice would be a Czech-style pilsner for that.
BC: Can you describe this beer in 10 words or less?
Beautiful ruby red color. Notes of fig and oaky vanilla.
BC: Do you know a story – or have a personal story – that revolves around this beer?
Doppelbocks have always been seen as a “special occasion” beer for me. I’m honestly not sure why. I might have gotten one as a birthday present at some point in time. However, I don’t think they need to be reserved for special occasions – only a comfortable chair and friends are required because doppelbocks are generally worth sharing!
BC: What's a good food pairing for this beer?
