We spoke with Area Two Experimental Brewing Master Brewer Phil Markowski about Synopsis Dark Sour Cherry.
BC: What’s your favorite aspect of this beer (flavor, aroma, etc.)?
The Synopsis series all feature a big, bold fruit character. We vary the featured fruit that we use in creating a series that changes with the seasons. In this case it was Morello Sour Cherries. Beyond the fruit, the supporting cast consists of wheat malt, lactic acid, Brett, wood and a hint of funkiness.
BC: Where does this beer’s name come from?
The Synopsis series takes inspiration from traditional fruited Lambics, but the process is decidedly shorter. In making this brand we combine the “fruits” of several different fermentation agents (5 in total). We ferment them individually then blend them together to form the final product. The name “Synopsis” derives from our unique method.
BC: Can you describe this beer in 10 words or less?
Bombastically fruity and a little bit funky; Light Year Lambic.
BC: Do you know a story – or have a personal story – that revolves around this beer?
I personally like to drink it... Is that a story? (Long enough to be an Instagram story, I’d say!)
BC: What's a good food pairing for this beer?
Because of the intense fruity component and the dryness, I’d peg Dark Cherry Synopsis as an aperitif of Cocktail Hour beer at a beer dinner. Might also work well with certain salads.
