We spoke with Church Street Brewing Co. Senior Brewing Consultant Charles Fort about Heavenly Helles.
BC: Who came up with this beer’s recipe?
Joe Gregor with help from Mark Naski.
BC: What’s your favorite aspect of this beer (flavor, aroma, etc.)?
The depth of flavor the decoction mash provides without being heavy or cloying.
BC: Where does this beer’s name come from?
Helles means light in German. The name is a play on Heaven and Hell.
BC: Is this your “desert island beer?”
Yes, Helles is a constant go-to for the brewery staff.
BC: Can you describe this beer in 10 words or less?
Crisp and perfect for any occasion.
BC: Do you know a story – or have a personal story – that revolves around this beer?
German Helles was the entire reason Church Street was started and initially was going to be the only beer we produced.
BC: What's a good food pairing for this beer?
Almost anything could be paired with helles, but ideally something light to not drown out the subtle nuances of this lager.
