Wild Heaven Beer Debuts Killer Tomato Smoked Tomato Saison

Wild Heaven Beer in Decatur, Georgia has announced the release of a fascinating beer: a smoked tomato saison called, fittingly, Killer Tomato. Full details on this release are below.


The smoked tomato saison you never knew you needed is back to attack...your tastebuds! But really, what a concept for the dog days of summer, and it just so happens to work. The brew team smoked 200 lbs of overripe organic grape 'maters from Watsonia Farms on our Big Green Egg and it just complements the earthy fruitiness of a classic saison backbone so well.

Our Brewmaster and co-founder Eric Johnson is first and foremost a gardener at heart. A horticultural master. Here he blends that most food-friendly of beer styles, the Belgian-French saison and, well, we'll let him tell it: "I use either grape or cherry tomatoes. In the past I have blanched and peeled larger heirloom varieties but have found that the small ones have way more flavor as well as more surface area to absorb smoke. I like ‘Sweet Million’ a lot. I used a blend of apple, cherry, and pecan wood to smoke it. 30 minutes per batch at 160 degrees. The tomatoes were juiced and added to the fermented beer.
