Mother Earth Brew Co. Head Brewer Chris Baker Talks Four Seasons Autumn '18

Mother Earth Brew Co. Head Brewer Chris Baker Talks Four Seasons Autumn '18

We spoke with Mother Earth Brew Co. Head Brewer Chris Baker about Four Seasons Autumn '18.

BC: Who came up with this beer’s recipe?
Four Seasons is very much an evolving program. You never know which barrels are going to be best, or how a blend is going to turn out. What we do typically with this program is plan out the beer style as it will appear on the packaging, then work backwards to design the recipe around that. There are a series of tasting trials, and small-scale blending sessions that precede the final blend, but the base recipes are normally already in barrels at that point.

BC: What’s your favorite aspect of this beer (flavor, aroma, etc.)?
My favorite part is how subtly the coconut plays in the background. In the past we used raw shaved coconut but wanted to amp up the intensity a bit on this one; however, we were worried about going overboard. I think it’s great when you can just tell it's there without the flavor taking away from the base beer.

BC: Can you describe this beer in 10 words or less?
Caramel custard coconut toffee with a subtle, roasty finish.

RavenBeer Head Brewer Brandon Stanko and Brewmaster Ernie Igot Talk The Imp and the Madhouse Oyster Stout

We spoke with RavenBeer Head Brewer Brandon Stanko and Brewmaster Ernie Igot about The Imp and the Madhouse Oyster Stout.

BC: What’s your favorite aspect of this beer (flavor, aroma, etc.)?
The smooth roastiness of the flavor and the saltiness in the back end.

BC: Where does this beer’s name come from?
The Imp and Madhouse Oyster Stout’s name comes from two sources. The first is The Imp of the Perverse by Edgar Allan Poe, a short story where the narrator brags about his clever murderous deed and expresses no remorse in his heinous crime. He continues to insist that we all have in our heads an Imp dictating to us self-destructive impulses. The reader eventually comes to realize the narrator’s insanity and discovers that he is locked away within a “Madhouse.” The Madhouse itself came about in a most serendipitous manner. As we use Poe’s stories and poems in the title of our beers, his story The Imp of the Perverse combined with  the name of our oyster supplier, coincidentally being Madhouse Oysters to create a perfect fit for the name of this stout — The Imp and the Madhouse Oyster Stout.

Monday Night Brewing Brewmaster Peter Kiley Talks Last Will & Testament

We spoke with Monday Night Brewing Brewmaster Peter Kiley about Last Will & Testament.

BC: Who came up with this beer’s recipe?
This one was my idea.

BC: What’s your favorite aspect of this beer (flavor, aroma, etc.)?
The mouthfeel. It has an elegant presence that feels incredibly luscious and balanced.

BC: Where does this beer’s name come from?
When making this beer, our marketing director (Jonathan Baker) and I were joking about how long the beer was taking to mature – 14 months. From there, we joked that we would have to write in our wills who the beer would go to after we passed from old age.

BC: Is this your “desert island beer?”
Absolutely not. This would be a terrible choice unless the island is super cold and has a fireplace.

BC: Can you describe this beer in 10 words or less?
Classic Old Ale with notes of raisin, tobacco and caramel.

BC: What's a good food pairing for this beer?
It’s such a big beer, you need big flavors for it. Stilton or Humboldt Fog cheese, for example. A toffee/caramel dessert would play well with the notes in it. Our social media and brand coordinator loves to pair this one with a Maduro cigar like a Padron 1926 or Undercrown.
